WILDCRAFT WINES
Spend the weekend with us exploring the possibilities of Central Texas foraging, to create simple wildcrafted wines. Humans have been brewing and fermenting wine for thousands of years! Open a whole new world of possibility with this class as we explore local wild yeasts, learn the process of preparing a simple wild wine, and discuss bonus topics including hyper-local sodas and beers. Since the foraging landscape changes with the seasons, the opportunities to explore this skill and get creative are truly endless!
Dive in on Day 1 with an exploration of local ingredients and the hands-on creation of wild yeast starters for fermentation. We will discuss the distinctions between primitive "raw" wines, country wines and their commercial cousins and end the day with a tasting.
Day 2 is hands on winemaking. Each student will take home a container of prickly pear wine starter to finish the fermentation process at home. The weekend will wrap with a peek at some other possibilities in wild brewing and Q and A on what we have covered.
